Utilisation of Research Findings Among Managers of Hospitality Industries in The Tamale Metropoli (Published)
This study was conducted to assess the utilisation of research findings among managers of hospitality industries in the Tamale Metropolis. The study employed an analytical cross-sectional study design. The questionnaire was employed to gather the data from 250 respondents. The data was analysed using Statistical Package for Social Sciences version 26.0. The study found that 78% of respondents did not see the benefits of using research findings and 78% of respondents identified limited knowledge of hospitality managers as a challenge in utilising research findings. The study established that there was an association between the educational status of respondents and utilisation of research findings (χ2=14.15 p<0.001). There was no association between the work experience of respondents and utilisation of research findings (χ2=6.15 p=0.061).The study concentrated on only mangers of hospitality industries in the Tamale Metropolis.This paper has the potential implications of providing justification for organizing research seminars for mangers of hospitality industries to equip them with the needed knowledge and competence to conduct research and utilize the findings for improvements The study would provide information to policy makers in addressing challenges that confront mangers of hospitality industries with in relation to uptake of research findings. This paper is the first to be conducted among the study population in the study setting. Hence will serve as a baseline data in Ghana

The Hospitality Industry and the Comfort of Customers: The Case Study of Airport Inn Hotel (AIH) In Tamale (Published)
In today’s highly competitive hospitality industry, advancing service quality is significant in lifting the status of the hospitality and tourism industry. Clienteles’ satisfaction with hotel service delivery is recognized as one of the criteria used to measure the quality of hospitality services. The expression of satisfaction with hospitality service delivery results in the appreciation of the services provided. There is a large body of literature available on customer satisfaction but only a few scholarly studies are directly put on the satisfaction of the customer in relation to the tourists in Tamale Ghana. This study therefore, assesses the effect of the services rendered at the Airport Inn Hotel on tourists’ satisfaction. This survey was conducted at a 3.5 Star Airport Inn Hotel (AIH) in Tamale amongst 100 tourists who were systematically sampled within a period of two months continuously and 10 service providers. Appropriate statistical analyses such as frequencies and percentages were utilized. Results of the study revealed that a high percentage of tourists had high expectations with hotel services. Analysis of tourists’ satisfaction with the hotel services provided revealed that a significant percentage of tourists were satisfied with the services delivered. The relationship between tourists’ expectations and the various measures of service delivery (safety and security, politeness of the staff and physical facilities) were established. Service providers’ commitment and tourists’ characteristics were also found to be significantly related. Based on the results the study advocates that hospitality service providers should pay attention on customers’ personalities and expectations when it comes to enhancing their satisfaction. This study may be important to researchers in hospitality and tourism in understanding guest satisfaction and their comfort in the hotel industry especially in the research area Tamale.

This paper focused on the promotion of hospitality and tourism activities through provision of library services. Information as a resource is valuable for businesses and individuals alike as we rely on good information to complete daily activities. Libraries are means of access to information, ideas and works of imagination. Library and information services are key actors in providing unhindered access to essential resources for hospitality and tourism advancement. The paper highlights essential library and information services to promote hospitality and tourism industries. The services in this category through the library that are expected to be useful in the hospitality industry include: provision of guides in form of maps, directories, biographies, etc, referral services (providing answers to client”s questions), entertainment (recreational facilities like provision of traditional games, toys, etc). The services highlighted are expected to be potentials for hospitality and tourism development in the 21st century

The COVID 19 Global Pandemic: A Panacea for Diversifying to Hospitality and Tourism in Nigeria (Published)
The COVID 19 global pandemic has provided Nations another opportunity to look inwards on the development and expansion of its economic activities and growth! The hospitality and tourism industry has proven to be one of the most valid sectors for diversification of economic activities in Nigeria, considering the continuous dropping of crude price in the international market, and the fast growing demand on the bio-fuel products in the world today! The researchers are of the opinion that developing the hospitality and tourism in Nigeria is one of the most viable options to continuously increase the Nations GDP! The realistic test and interviews were conducted and presented in simple percentage table, and graphs were also deployed to show the reliability of the test! It was concluded that hospitality and tourism still remain the most viable economic activity and sector that will always stand the challenges of time, if properly developed! And was recommended that the government and agencies in charge of tourism and hospitality should fully divert its attention to the development of the hospitality and tourism sector in Nigeria

Assessing the Hygienic State of Hospital Kitchens in The Sekondi – Takoradi Metropolis of Ghana (Published)
The hygienic state of the kitchen where foods are cooked as well as the food handlers have an impact on either causing food poisoning or otherwise. Thus, leading to the conduction of the study. The study was a descriptive cross-sectional survey design with the objectives of finding out food handlers’ knowledge on hygiene; assessing the personal, food and kitchen hygiene practices of food handlers in hospitals; and assessing ways in which foods are packaged and served to patient’s hospitals. Fifty (50) kitchen staff were chosen through a purposive sampling technique and structured questionnaire was used to collect data. The data was analyzed using frequencies, percentages, charts and tables. It was found out that the respondents understood the meaning of hygiene and could state some examples. Though most of the hospitals’ kitchen staff were found to comply with hygienic measures, a few were doing the contrary which exposes the foods they prepare to contaminations. The kitchens’ packaging and delivery of food to patients were quite hygienic. However, their means of disposing off waste left much to be desired. Finally, it was recommended that the hospitals’ authorities should increase supervision over the kitchens, organize periodic training on all aspects of hygiene and food safety for staff members of the kitchens and take stringent measures against kitchen staff members who do not comply with the appropriate hygienic regulations.
